The first batch made 40 cookies, instead of 48. I'm sure some of them were too big. But that's okay because I only need 72. So if I do the second batch the same as the first, I'll have 8 leftover. More than enough for Mama and kiddos.
And yes, I had to do the batches separately. Mainly because I didn't think double the dough would fit in my mixer. It probably would have. But better safe than sorry.
I've never worked with cake flour. It is fine, soft stuff. Sure, bleached, my least favorite baking word. I wonder if King Arthur Flour makes a cake flour? My grocery store doesn't carry it.
Wow, "baking live" is hard. Because, well, I'm not baking while I'm blogging. At least, in that respect, Sara Moulton had it easy! (of course, it wasn't easy. And she didn't even always make it look easy, which is why we definitely preferred her show and were so disappointed when it was off air).

ReplyDeleteKing Arthur does make cake flour - our Queen Guinevere is bleached and is only available through our catalogue/Web site (kingarthurflour.com). BUT, you'll be excited to know that we recently introduced the only unbleached cake flour available - ask for it at your favorite grocery store, or buy it online! Hope that helps.
