Try These

I just finished a 16 oz bottle of pure vanilla extract from all the baking with the kids and was rinsing out the bottle so DD could have it for her kitchen, when I noticed the Vanilla Butter Cookie recipe on the back. So we made it this evening when they wanted dinner early and it wasn't ready.

Ohmygoodness, these are divine. I hope there are some left to take to our playdate tomorrow.

Vanilla Butter Cookies

1 cup softened butter (2 sticks)
1 cup sugar
1 egg
1 tablespoon vanilla extract (I used my new bottle of Penzey's single strength)
2 cups flour
1/4 teaspoon salt

Preheat oven to 350F.

Cream butter and sugar until light and fluffy. Add egg; beat well. Blend in vanilla. In a separate bowl, combine flour and salt; add to creamed mixture.

Drop by rounded teaspoonfuls onto ungreased cookie sheets. Bake 10-12 mintues or until golden brown.

Makes 3 dozen.
