Summer Fun So Far

Making some progress . . . . 
  1. Go to Vermont--oh, that was fun!
  2. Sis's speedskating camp--she loved camp (with 2 Olympians and a national coach!) and we liked our wanderings around Jersey, including living history museums, lighthouses, great Malayasian food.
  3. Go to Texas--Yes, we did!  And completed a subset of our list:  boat rides, driving the golf cart, fishing, tubing, sailing, fireworks, Mikeska's, Prasek's, Buc-ee's, Whataburger, seeing dolphins, walking on the pier at night, bird sightings (pelican, mockingbird, Mexican eagle/caracara, gray hawk, white-winged dove, purple martins, even baby buzzards), hammock time, chalk art, water balloon fight, birthday parties, visiting with family.
  4. Family camp in Maine
  5. Sis's computer camp
  6. Bud's theater camp 
  7. Ice skating with friends
  8. Trip to NYC with kids by myself?
  9. Trip on Port Jeff ferry with kids by myself?
  10. See musical Come From Away

Summer Fun List 2017

With just two half-days of school left, I've been looking over our old Summer Fun lists and I can already tell that this year will be a bit different.  I don't organize activities as much as I did years ago because the kids don't need me to.   I realized more clearly this year. that this is definitely my list, not theirs, and some I've included things I want to do for me and things I hope they do.  Still, here's a list of ideas for me to keep in mind.

Summertime

With school on Thursday, our summer is essentially over.  We're hanging out, not doing much, probably won't go anywhere this weekend.   We did do a lot this summer, looking over our list, but it came in spurts.  There were days, weeks even, when we just stayed home, inside, playing computer games and crafting.  We didn't swim as much as I expected, nor have as many playdates.  We never got to the beach nearby.  But I think that's okay.

It was more of a cat summer than we expected--we got Eris in the beginning and Mo had health challenges, including a stay at the vet hospital; I'm still giving him fluids every other day and he's doing really well.

We also went to the movies more than ever before, which isn't saying much because our total, per year, had been around one movie!  But with Ghostbusters, Life of Pets, Finding Dory, Kubo and the Two Strings etc., we went quite a bit for us.

I'm of two minds about summer ending, both ready for a schedule and the return of cooler weather AND sorry to have more things to do instead of the freedom of summer days.


What We Did This Summer
  1. Party/activity in honor of Aunt Sis--yep, Zentangle classes
  2. Go swimming at Y with friends--not at the Y but at a friend's pool
  3. Inspirational Art Rock Drop (decorate rocks and leave them in public places)--numerous times
  4. Meet friends at ice rink--we tried, but no one could play
  5. Attend town festival in June/volunteer at historic house--yep, annual town festival
  6. Birthday trip to the Wizarding World of Harry Potter in Orlando--YAY!
  7. Beach trip in city--yep, with beach and movies but no ice cream truck
  8. Putt-putt golf--yep, on 4th of July weekend, at a new place for us
  9. Make ice cream--yep, raspberry chocolate chunk
  10. Have a lemonade stand (Bud asked to do it for Autism)--we raised $76
  11. Celebrate 4th of July--went to a kung fu friend's picnic
  12. Celebrate Mama's birthday--does Harry Potter World count?
  13. Birthday parties for kids--slumber party and rope course
  14. Create a Zentangle tile-a-day--I've done this
  15. Attend friends' Friday Night Dance Party--not as often as I'd like, but we've been a few times
  16. See Finding Dory--yes
  17. See Secret Life of Pets--yes
  18. See Kubo and the Two Strings--yes
  19. Harry Potter and the Curse Child book party--Mama and I went
  20. Zentangle classes with Sis and Bud helping--great success!
  21.  Learn a new game--for me, Dragonvale; the kids have picked up Slither-io.  We have all tried the "retro" games, 5 Seconds and Simon's Cat.
  22. Do some of our summer homework NOT the last week of school--yep, both have done a lot of reading and a little math at khanacademy.org
  23. Harry Potter tag--with special rules for spells like "incendio" (can't cross a certain fire line), "expelliarmus" (can't use wand for 20 seconds), and "stupefy" (can't move for 30 seconds)
  24. "B" movies--Sharknado!
  25. Those pre-80s TV shows--"Gilligan's Island," "Love Boat," "Happy Days," "Brady Bunch"
  26.  Watch "Agents of S.H.I.E.L.D." with kids
  27. Watch The Birds

    Summer Fun 2016: A Month to Go

    I haven't been keeping up with the official Summer Fun list, even if we've been doing many of the activities.  Here's the reckoning with about a month to go (we haven't done the things in bold.)
    1. Party/activity in honor of Aunt Sis--yep, Zentangle classes
    2. Go swimming at Y with friends--not at the Y but at a friend's pool
    3. Inspirational Art Rock Drop (decorate rocks and leave them in public places)--numerous times
    4. Playgroup Open House idea
    5. Meet friends at ice rink--we tried, but no one could play
    6. Attend town festival in June/volunteer at historic house--yep, annual town festival
    7. Birthday trip to the Wizarding World of Harry Potter in Orlando--YAY!
    8. Beach trip in city--yep, with beach and movies but no ice cream truck
    9. Look for sea glass at beaches--maybe this Thursday

      Summer Fun: First Full Week

      This first like our first full week of summer together, with 4th of July on one end and birthday celebrations on this one; plus, both kids were home in between, unlike last week when Sis was at Camp.  With Bud at camp the next two weeks, then Sis, then them both, it'll be a month or more before we're all home together for a week.

      And we did the week up right, I'd say.

      1. Birthday parties for kids--Bud had his birthday party last night.
      2. Meet friends at ice rink--well, we went ice skating but no one came with us.
      3. Have a lemonade stand --we did it for a special ed charity
      4. See Secret Life of Pets--saw it today as part of the kiddos' birthday celebration
      We also watched those 70s shows ("Gilligan's Island," "Happy Days," and "Love Boat," with several more set to tape.  For the kids, it was like watching the proverbial train wreck--they thought the shows were horrible, but they couldn't turn them off, especially because they recognized some people (like Broadway star Brian Stokes Mitchell on the "Love Boat"!!!!  Plus "Mr Miyagi" and "Winthrop" in Music Man on "Happy Days." Mama and I were pretty horrified, too--so sexist and cliche, but our childhoods nonetheless--I could sing all the theme songs.  And we've been watching another season of the Great British Bake Off.  I'm hoping it helps get us in the mood for that weekly tea party idea.

      Summer Fun 2016: If Life Gives You Lemons . . .


      In truth, we used a mix to make the lemonade for our lemonade stand.  But we did put slices of lemon in each glass we sold.  And Bud offered a special sugar rim, which only the under-10 set wanted!

      Yes, we had our annual summer lemonade stand.  Bud wanted to raise money for causes that support people with Autism, and so we raised funds for a local parent group that aids teachers, parents, and children.

      It was the hottest day so far, about 90F at 4 pm.  And the kids sold $76 worth of lemonade, chocolate chunk bars, and cherry jam oatmeal bars.  Many of our neighbors came out and several friends from around town.  Even some strangers--one remarked that, at a dollar a cup, prices had gone up!  Well, it was a fundraiser.

      And fun.  It was lots of fun.

      Chocolate Chunk Oat Bars

      1 cup all-purpose flour
      ½ teaspoon baking soda
      ½ teaspoon salt
      1 cup packed light brown sugar
      ½ cup butter, softened
      1 egg
      1 tablespoon water
      1 teaspoon vanilla
      1 ½ cups uncooked old-fashioned oats
      1 cup semisweet chocolate chunks or chips, divided

      Preheat the oven to 375F. Lightly grease a 9” square baking pan.

      Combine the flour, baking soda, and salt in a small bowl. Beat the sugar and butter in a large bowl with an electric mixer until creamy. Add the egg, water, and vanilla; beat until well blended.

      Stir in the flour mixture and oats; mix well. Stir in ½ cup chocolate chunks. Spread the dough in the pan with a rubber spatula. Sprinkle wit the remaining ½ cup chocolate chunks.

      Bake for about 30 minutes or just until the center feels firm. Transfer the pan to a wire rack to cool completely.

      Sesame Street Yummy Cookies: Baking with Kids



      Oatmeal Jam Bars

      1 cup all purpose flour
      1 cup quick-cooking oats
      2/3 cup packed brown sugar
      ¼ teaspoon baking soda
      ½ cup butter
      1-10 oz. jar of preserve

      In a mixing bowl, combine flour, oats, brown sugar, and baking soda.  Cut in butter til mixture resembles coarse crumbs.  Reserve ½ cup of the flour mixture.  Press remaining flour mixture into the bottom of an ungreased 9 x 9 x 2 inch baking pan.  Spread with desired filling.  Sprinkle with reserved flour mixture.

      Bake in 350°F oven for 30 to 35 minutes or til the top is golden.  Cool in the pan on a wire rack.  Cut into bars.

      Summer Fun 2016: The First Week

      We're off to a pretty fun start to summer, with Harry Potter world.  It's going to be hard to match that energy and enthusiasm for the rest of our break.

      But we still had fun.
      1. Attend friends' Friday Night Dance Party:  we went last Friday, taking a homemade strawberry-blueberry pie with us.  It was gone in minutes!  The kids played with several children, mainly in the (pretty cold) swimming pool, while the grownups chatted.  I know this group through "old" church and really like spending time with them.  We'll try to go every Friday.
      2. Inspirational Art Rock Drop:  we've done this at the book club meeting at the beach (our first), the gifted & talented class summer party at the park, and several times at the Pacific Resort in Orlando.  I now carry sharpies wherever I go!  
      3. Attend town festival/volunteer at historic house:  this happened early, before school was out.
      4. Birthday trip to the Wizarding World of Harry Potter in Orlando
      5. Make ice cream:  Bud and I are making Raspberry Chocolate Chunk today.  Just finished making the custard, which is chilling in the fridge.
      6. Birthday party for kids:  Sis's slumber party.
      7. See Finding Dory:  Mama and Bud went while Sis had her party.  They haven't said a thing about it.  We're hoping to go this weekend.
      Not bad for the first week!

      One thing that wasn't on the original list--"B" movie night!  We introduced the kids to Sharknado last night and had fun howling at the wooden dialogue, stiff acting, impossible scenarios, and cheap special effects.  Bud thought it was a little bloody but ended up "dying" on the floor, pretending to lose an arm and a leg while yelling that "red jello" blood was shooting up everywhere (copying the first scene from Zootopia), with Sis as the floppy shark.  I laughed about our cat Mo being a "Mo-nado" and made up a song to the "Transformers" theme ("Mo-nado, danger and surprise/Mo-nado, felines eat your eyes!")  I think you had to be there.

      Summer Fun 2016

      It's that time again:  our summer fun list for 2016!  Today was the last day of school and it definitely feels like summer, with both the heat and the exhausted grumpiness the kids get when they're together too much.

      This year's list is shorter than years past, with hopes that we actually do most of it.  We already have concrete plans for several things.  It feels like a longer summer than usual, with no snow days tacked on and the first day back in September, not August.  I haven't counted weeks yet, though.

      Summer Fun: Final List



      Summer has just about drawn to a close.  And it's been a pretty good one.  Here's our final Summer Fun 2015 list of completed activities.

      • *Go to bird festvial:  Such fun!  Loved the Eastern Screech Owl
      • Host a sleepover with friends:  went to a sleepover with several friends; had one sleepover last week and stayed up watching Minecraft videos and making fudge

      • Mario kart-athon--Well, they did a few Splatfest-athons!
      • Movie night--lots of these, most recently with Back to the Future
      • Learn to cook weekly dinners--they did another favorite-meal cooking lesson with Mama, with steamed mussels for Bud and fried chicken for Sis
      • Hang pictures--we filled the wall in our bedroom.

      • Meet friends at ice rink:  Yep, it's now a weekly event.
      • *Attend town festival in June/volunteer at historic house:  we did this before school was even out!
      • Family book club (we're reading Menagerie and also Redwall):  I started Menagerie over 4th of July weekend.  It was pretty good.  The kids haven't started Redwall yet.
      • Eat Dole Whip:  first night of summer, we got Dole Whip and Fluffernutter sundaes!
      • Make ice cream:  Strawberry Soda is great.  Peaches and Cream is great, too.
      • Picnic:  we had a deli picnic, but I hope to do something more sophisticated soon.
      • Watch some movie musicals:  we started by watching "Lost Broadway Treasures" and other compilations of famous songs.
      • Play in sprinkler:  and used it to make a slippery water slide!
      • *Go to culture festival (Scottish, Irish, Greek, etc.):  we loved the Greek festival food, as always!  
      • Decorate chalkboard for summer:  we started our own mini-drawings of Awesome Summer Things.
      • Celebrate 4th of July:  Yes, we did!
      • Celebrate Solstice:  they stayed up "all night," which was midnight for Sis and about an hour later for Bud.  I even played Mario Kart with them at midnight.
      • Celebrate Mama's birthday:  a weekend of take-out meals and movies!
      • Birthday party for kids:   Minions movie birthday party, with decorate-your-own-Minion jars and Minion cupcakes.
      • Learn how to clean bathrooms:  Bud earned a ticket for this already--on his own initiative!
      • Learn an ASL sign a day (or more)
      • Learn some computer coding using Scratch:  they have started making a cat draw stars around the earth.
      • Make shrub for 4th of July:  Bud and I really like it
      • Photos with public art around town ("benching," Bud called it)  We're about a third of the way done.
      • Attend friends' Friday Night Dance Party:  for first one, the kids swam and tried "kiddy crack" (butter-cinnamon-sugar spread on graham crackers); they also like badminton, or "chaosminton" with several shuttlecocks.
      • Explore new music genres together ("Music Mondays"):  we started with the 80s, then Celtic (Secret of Roan Inish soundtrack), Broadway, jazz, and patriotic.  Not sure what this week will be.
      • Research places to go in England, etc:  I'm reading Susan Branch's book about falling in love with the English countryside
      • Purge and donate toys and books:  doing really well with this; lots of donations.  Kids prepping to have room makeovers.
      • Do a 1000 piece puzzle:  Bud and Mama are our puzzlers--they've done cupcakes, Broadway, London, New York, among others.
      • We also made or ate the following foods, which I totally forgot to blog about:

      FODMAPS Rice Pudding

      1 litre of lactose-free milk
      100g of raw rice (Arborio, white, basmati)
      1 tablespoon of raw sugar
      Cinnamon

      1.     Pour lactose-free milk into a medium-large sized saucepan.
      2.     Place saucepan onto a stove top and allow lactose-free milk to almost reach boiling point. Then reduce the heat, add in the rice and allow to simmer.
      3.     Add in 1 tablespoon of raw sugar to the milk-rice mixture and stir through. Continue stirring frequently for approximately 20 minutes until the rice is tender and the mixture has thickened to your liking.  If mixture is too thick you can add more milk. If mixture is too runny continue cooking – it will thicken up.
      4.     Keep stirring frequently so that the milk doesn’t burn and to avoid rice pudding sticking to the bottom.
      5.     Once cooked, remove rice pudding from saucepan.

      TRADITIONAL SERVING SUGGESTIONS
      ·       Serve it hot with a sprinkle of cinnamon on top.
      ·       Serve it cold by cooling it in the fridge first, then a sprinkle of cinnamon on top

      FOR THE CAKE:



       Butter for greasing baking pans
      1 ½ cups all-purpose flour
      1 cup sugar
      1 teaspoon baking powder
      ½ teaspoon baking soda
      ⅓ cup best-quality cocoa powder
      6 ounces (1 1/2 sticks) unsalted butter, at room temperature
      2 large eggs, at room temperature
      2 teaspoons vanilla
      ¾ cup sour cream, at room temperature

      FOR THE FROSTING:

      6 ounces good-quality semisweet chocolate, broken into small pieces
      3 ounces ( 3/4 stick) unsalted butter
      1 tablespoon light corn syrup
      ½ cup sour cream
      1 teaspoon vanilla
      2 ½ cups confectioners' sugar, sifted
      1. For cake: heat oven to 350 degrees. Butter sides of two 8-inch cake pans, and line bottoms with parchment paper. In the bowl of a food processor fitted with a knife blade, combine flour, sugar, baking powder, baking soda, cocoa powder, butter, eggs, vanilla and sour cream. Process to make a smooth, thick batter.
      2. Using a rubber spatula, divide batter between pans, and smooth tops. Bake until a cake tester inserted in center comes out clean, 25 to 35 minutes; do not overbake. Transfer to a wire rack to cool for 10 minutes before removing from cake pans.
      3. For frosting: Combine chocolate and butter in a large heat-proof bowl, and heat until melted in a microwave oven or over a pan of simmering water. Remove from heat, and allow to cool for 5 minutes. Stir in corn syrup, sour cream, and vanilla. Whisk in confectioners' sugar until very smooth. Frosting should be thick and spreadable. If necessary, add a teaspoon or two of boiling water to thin it, or additional sifted confectioners' sugar to thicken.
      4. Cut four strips of waxed or parchment paper, and place them side by side on a cake plate, covering the surface. Place one cake layer domed-side down on plate.
      5. Spoon about a third of the frosting onto center of cake, and use a knife or a spatula to spread it evenly. Place the other cake on top, domed side up. Spoon another third of frosting on top of cake, spreading to make swirls or a smooth finish. Spread sides of cake with remaining frosting, and allow to sit for a few minutes until set. Carefully remove paper strips. Place cake under glass or in an airtight container, and set aside in a cool place until serving.

       Toby’s (Not Quite Perfect) Yellow Cake with Chocolate Frosting, from Lisa Graff, A Tangle of Knots

      FOR THE CAKE:
      2 1/2 cups flour (plus extra for preparing the pan)
       
      1 1/2 teaspoon baking powder
       
      1/4 teaspoon baking soda
       
      1/2 teaspoon salt
       
      1 cup butter, at room temperature (plus extra for the pan)
       
      1 1/2 cups sugar
       
      2 teaspoons vanilla
       
      3 large eggs, at room temperature
       
      1 cup milk, at room temperature
       
                 FOR THE FROSTING:
      2/3 cup semisweet chocolate chips
       
      3/4 cup butter, at room temperature

      3 1/2 cups powdered sugar
       
      1/2 cup milk, at room temperature
       
      1 tablespoon vanilla

      1. Preheat oven to 350°F. Lightly grease the bottoms of two 8-inch round cake pans with butter. Using the cake pans as a template, trace two circles onto wax paper and cut them out, placing one wax circle in the bottom of each pan. Grease both pans with butter again, covering the wax paper as well as the sides of the pan. Sprinkle the inside of the pans lightly with flour, and tap the pans to distribute it evenly. 

      2. In a medium bowl, whisk together the flour, baking powder, baking soda, and salt. Set aside. 

      3. In a large bowl, beat the butter and sugar with an electric mixer on medium-high speed until fluffy, about 2 to 3 minutes. Add the vanilla, then the eggs, one at a time, beating until well combined.

      4. Reducing the speed on the mixer to low, add about a third of the flour mixture to the batter, combining well. Add about half of the milk and combine. Then add another third of the flour mixture, the last of the milk, and then the last of the flour, combining well each time.

      5. Pour the batter into the pans and smooth the tops. Bake for 25 to 30 minutes, or until a toothpick comes out clean. Cool completely before frosting.

      6. While the cake is cooling, make the frosting: In a double boiler or a heatproof bowl fitted into a saucepan of simmering water, carefully melt the chocolate chips. Remove from the heat and allow to cool.

      7. In a large bowl, cream the butter with a mixer on medium speed until fluffy, about 3 minutes. Gradually add about half of the powdered sugar, blending well. Beat in 2 tbsp of the milk and all of the vanilla, then beat in the remaining powdered sugar, followed by the remaining milk. Add the cooled melted chocolate to the butter mixture and beat until smooth.

      8. When the cakes are completely cooled, place one cake layer on a plate and spread a thin layer of frosting on top. Repeat with the second cake layer, and cover the whole cake with frosting.

      The Owner’s Peanut Butter Cake with Peanut Butter Frosting,  from Lisa Graff, A Tangle of Knots
      What you'll need:


               FOR THE CAKE:
      small sliver of butter (for greasing the cake pan)

      2 1/4 cups flour (plus extra for preparing the pan)

      1 1/2 cups sugar

      1/2 teaspoons baking powder

      1 teaspoon salt

      1/2 cup creamy peanut butter, at room temperature

      3 large eggs, at room temperature

      1 teaspoon vanilla

      1 1/4 cups milk, at room temperature

               FOR THE FROSTING:

      3 cups powdered sugar

      2/3 cup creamy peanut butter, at room temperature

      1 1/2 teaspoons vanilla

      1/2 to 2/3 cup milk


      What to do:

      1. Preheat oven to 350°F. Lightly grease the bottoms of two 8-inch round cake pans with butter. Using the cake pans as a template, trace two circles onto wax paper and cut them out, placing one wax circle in the bottom of each pan.       5. While the cakes are cooling, make the frosting: In a medium bowl, cream the powdered sugar and peanut butter with an electric mixer on medium speed until smooth, about 2 or 3 minutes. Add the vanilla and 1/4 cup of milk, and beat until well combined. Gradually add more milk, one teaspoon at a time, until the frosting is smooth and spreadable.

      6. When the cakes are completely cooled, place one cake layer on a plate and spread a thin layer of frosting on top. Repeat with the second cake layer, and cover the whole cake with frosting.

      Marigold’s Lime Pound Cake,  from Lisa Graff, A Tangle of Knots


       FOR THE CAKE:

      large eggs, at room temperature


      1/2 teaspoon vanilla 


      2 teaspoons grated lime zest (from approximately 2 limes)

      2 tablespoons lime juice (from approximately 1 lime)

      1 cup butter, at room temperature (plus extra for greasing the pan)

      1 1/4 cups sugar

      1/2 teaspoon salt

      2 cups flour



      What to do:



      1. Preheat oven to 325°F. Grease a 9-by-5-inch loaf pan with butter. 


      2. In a small bowl, whisk together the eggs, vanilla, lime zest, and lime juice. Set aside.

      3. In a large bowl, beat the butter with an electric mixer on medium-high speed, until fluffy, about 2 minutes. Add the sugar and the salt and beat, starting on low speed and then increasing to medium-high, until well combined, about 2 minutes more. Slowly add the egg mixture and beat until well combined, about 3 minutes.

      4. Reducing the speed on the mixer to low, gradually add the flour to the batter, and beat until just combined.

      5. Pour the batter into the pan and smooth the top. Bake for 60 to 70 minutes, or until a toothpick comes out clean. Cool completely before serving.
